Black-eyed Bean

Ingredients
  • 2 cups black-eyed beans soaked for
  • 8 hours & cooked in water for 1 hour 1 onion
  • 1 tablespoon tomato paste
  • 1 can tomatoes, chopped 2 cups stock
  • salt and pepper to season
Method

In a large saucepan, soften the onion in a little water over a medium heat and then drain. Particularly mash the black eyed beans using a fork. Add the tomato paste, tomatoes, stock and beans to the onions and season. Stir well and simmer for 30 minutes.
