Sun dried tomato & zucchini frittata

Ingredients
  • 2 eggs
  • 1 tablespoon water
  • 1 medium zucchini, grated
  • 1 green onion, finely sliced
  • 1 tablespoon low-fat semi-dried tomatoes
  • 1 dessert-spoon finely sliced green olives
Method

In a bowl, beat eggs and water together, then stir in other ingredients. Gently heat small non-stick pan gently, then tip in egg mixture and cook gently until set. Add salt & pepper to taste.
