Tomato Soup

Ingredients
  • 1 onion sliced
  • 1½ seeded ripe tomatoes
  • 1 litre chicken stock salt & pepper
Method

Soften onion in a large saucepan, add tomatoes to pan and cover. Cook gently until tomatoes are very soft, about 20 minutes. Pass through a sieve and return to saucepan. Add stock and simmer for about 15 minutes. Puree using hand blender, check seasoning and serve.
