Vietnamese Cabbage

Ingredients
  • ¼ wombuk (chinese cabbage), shredded
  • ½ carrot, grated
  • 1 cup mixed Asian herbs – thai basil, mint, coriander
  • Mix these in a bowl.
Method

Then mix the following to make a dressing:

  • 1 long red chilli (seeds removed), finely chopped
  • 1 clove garlic, crushed 2 tablespoons artificial sweetener
  • juice from 2 limes
  • ¼ cup rice vinegar
  • ¼ cup fish sauce
  • Pour over salad, toss and serve.
