- 120g chicken breast, skin off
- 4 fresh basil leaves
- 1 artichoke heart, quartered
- 3 semi dried tomatoes , low fat
- Mediterranean seasoning
Make pocket in side of chicken and gently fill with artichoke, basil and tomatoes. Sprinkle with Mediterranean seasoning. Gently cook in non stick pan, 5 minutes each side. Keep pan covered. Remove lid to brown breast for last 2 minutes of cooking time.
